A Community Treasure Shines in the City By the Lake

Since 1951, much of the social life in Hendersonville has revolved around Bluegrass Yacht & Country Club. Founded 18 years before the incorporation of the city of Hendersonville, the club offers a friendly and welcoming environment for members and guests to enjoy a wide range of entertainment, recreation, dining and community activities.

Most of the club’s facilities are situated on over 100 acres of rolling grounds that was once the plantation home of Revolutionary War veteran Hubbard Saunders. Saunders was also a Methodist minister who founded the Saundersville Methodist Church, which still exists today, just a short distance from Bluegrass.

Bluegrass offers its members a number of amenities, including an 18-hole championship golf course and pro shop, a fully equipped tennis center, a junior Olympic size pool with locker rooms and showers and a full-service marina, featuring 68 covered boat slips ranging in size from 24 to 52 feet.

At the core of the Bluegrass experience is the world class dining and afterhours entertainment offered in the Harris restaurant and the adjacent 51 Lounge. Both the restaurant and the lounge offer stunning views of the scenic golf course that create a relaxing atmosphere for dinner and drinks with friends and family. In addition, Bluegrass offers an outdoor patio complete with large screen TVs, comfortable lounges and two fire pits that help to make every visit a memorable occasion.

“Our menu is planned and prepared daily from custom recipes developed by Executive Chef Donald Ferguson,” says Membership Director Samantha Starbuck. “Steaks, seafood, custom dishes – we have it all. From breakfast through dinner, our entrees are unparalleled in Hendersonville.”

While still member-owned, Bluegrass is currently leased to and operated by Dallas-based ClubCorp. This arrangement allows Bluegrass to retain the warm, comfortable feel of a locally owned facility, while enabling it to take advantage of the resources of the nation’s largest operator of private clubs.

ClubCorp operates more than 200 private golf and country clubs spread across the United States. Membership in Bluegrass provides access to the ClubCorp Network that features over 300 private clubs and resort properties across the world.

Recently, the club underwent a multimillion-dollar series of state-of-the-art upgrades. From redesigned dining and meeting rooms to a renovated swim complex to new golf greens and fairways, Bluegrass offers some of the most innovative and attractive facilities of any country club in the nation.

Currently, Bluegrass has 740 members spread across multiple categories including social, young executive and golf. After a one-time joining fee, monthly member dues range from $165 to $458.

Unlike the demographics of many other country clubs, the average member age at Bluegrass is only 41. This younger median age, coupled with the club’s extensive recreational facilities, has helped shape it into a very family-friendly destination.

Throughout its storied history, Bluegrass has played host to a number of celebrities. The list of notable visitors includes entertainers Vince Gill and Glen Campbell, professional athletes Lou Graham and Mickey Mantle and dignitaries Col. Harlan Sanders and Rev. Billy Graham.

The club has also had several famous members, including Reba McEntire, William Lee Golden, Richard Sterban, Roy Orbison and Conway Twitty.

Although Bluegrass is a private club, many of its facilities are available for hosting events for area corporate, nonprofit and school organizations. From meetings to catered luncheons to golf tournaments, Bluegrass is the destination of choice for Hendersonville area event planners.

“Unlike many other country clubs, you don’t have to be a Bluegrass member to host an event here,” says Jennifer Turrill, private event director. “We are happy to open up our facilities to support the needs of our community.”

Many different organizations make regular use of the Bluegrass facilities, including the Hendersonville Area Chamber of Commerce, the Junior Service League and the Hendersonville Rotary Club.

Bluegrass also serves as the home of several HolidayFest events each year, including the Garlands and Glitter Fashion Show, the Holiday Tablescape Fashion Show, the Bows & Ballcaps Breakfast with Santa and the St. Nicholas Ball.

Additionally, the club hosts many additional private events each year, including wedding receptions, reunions and awards celebrations.

“Hosting public and private events is not just good for our community, it is also good for club growth,” adds Samantha. “Many of our members decided to join Bluegrass after having attended an event.”

All in all, the club’s hospitality and community service have established it as a Hendersonville community treasure. If it is happening in the City by the Lake, it is likely happening at Bluegrass Yacht & Country Club.

The secret to making a Nashville Hot Chicken sandwich worthy of the Music City

By now, you've assuredly witnessed the Nashville Hot Chicken craze. The satisfyingly spicy fried chicken’s popularity went from 0 to 60 mph seemingly overnight; however, with a versatility that spans the Scoville heat scale (all depending on the composition of the dish’s requisite spice rub), it’s conceivable that Nashville Hot Chicken is one of the few things in life that has the potential to satisfy everyone. Well, anyone who eats chicken, that is.

With origins dating back to the 1930s, Nashville Hot Chicken - as its name suggests - is a representative dish for Music City's black community. Yet, for the better part of a century, this staple of regional southern cooking could only be found there. Today, the fiery comfort food is making appearances all across the country; however, the most authentic examples are rooted in the capital city where the dish was born. And while the South may be known for its hospitality, don't expect Nashville's longstanding hot chicken purveyors to welcome you into their kitchens anytime soon. (They won't divulge their secrets, either.)

In an attempt to protect the source of its addictive spicy poultry, Prince's Hot Chicken, the recognized origin of the dish, has stopped allowing media into its kitchen, while John Lasatar, the executive chef who developed the spice blend for Hattie B's (a relatively newcomer to the hot chicken circus), only tells reporters that the typical base includes cayenne pepper, sugar, and paprika.

Fortunately, Katie Davis, the director of food and beverage at Bluegrass Yacht and Country Club, hasn't taken a vow of secrecy when it comes to the golf club's hot chicken sandwich. And while she shares her recipe with us here, she also points out that the spice mixture that you use can be straightforward and simple. "It doesn't have to be fancy," she says. "It can be as basic as cayenne pepper, salt, and granulated garlic."

Just don't skimp on the heat. According to Davis, the biggest mistake home cooks make is not creating a truly hot-and-spicy finished product. Also, use chicken thighs instead of breasts, since "they'll be moister and carry better flavor."

Bluegrass Yacht and Country Club's Nashville Hot Chicken Sandwich

Ingredients:

2 medium boneless chicken thighs (clean the pockets of fat and skin before soaking)

2 Brioche slider buns

3 oz. Low Country Slaw (recipe below)

2 dill pickle slices

Hot Chicken Soak: 

2 large eggs, beaten

1/3 cup hot chicken spice

1 tsp. Worcestershire 

1 tsp. hot sauce

Hot Chicken Flour Mix :

1 cup all-purpose flour 

1/2 cup corn starch

1 tsp. Lowry’s seasoning salt

1/2 tsp. white pepper 

Hot Chicken Spice Mix:

1 tbsp. cayenne pepper

1 tsp. salt

1 tsp. granulated garlic

1/2 tsp. white pepper

1/2 tsp. paprika

Hot Chicken Oil Dip:

1 cup melted duck fat or vegetable oil

2 tbsp. hot chicken spice 

Preparation:

Begin by soaking the chicken thighs overnight.

Remove the chicken from the soaking liquid, then dredge it through the hot chicken flour, making sure the thighs are coated evenly.

Heat a large amount of oil (either in a non-stick skillet or in a deep fryer) to 340 degrees F.

When the oil reaches its temperature, fry the chicken thighs until the meat reaches an internal temperature of 160 degrees F. (approximately 6 to 8 minutes)

While the chicken is frying, butter and toast the brioche buns in a dry skillet or on a flat top.

When properly fried, remove the chicken and quickly dip it in the hot chicken oil dip mixture.

Place the chicken on a roasting rack set over a sheet tray and liberally season the chicken on all sides with hot chicken spice mix.

Place 3 oz. of low country slaw on the bottoms of the two toasted brioche buns.

Add a chicken thigh to each slider, then top with the dill pickle slices and the remaining half of the brioche bun.

Low Country Slaw

Dressing Ingredients:

1/2 cup mayonnaise

1/4 cup buttermilk

1 tbsp. brown sugar

1 tbsp. apple cider vinegar

1/2 tsp. kosher salt

1/2 tsp. black pepper

1/2 tsp. celery seed 

Slaw mix ingredients:

1/2 large head cabbage, thinly sliced

1/4 head of purple cabbage, soaked and rinsed 4 to 5 times to remove some of the color, then thinly sliced

1 large carrot, shredded 

1/4 bunch chopped Italian parsley

In a large bowl combine slaw ingredients and dressing and mix well.

From the start of Cowboy Carter , Beyoncé makes it clear this ain’t your typical country album. Opening epic “Ameriican Requiem” is part gospel, part-Queen, part-Buffalo Springfield as the artist lays out both her intentions and lineage. “Used to say I spoke ‘Too country’/And the rejection came, said I wasn’t ‘country ‘nough/Said I wouldn’t saddle up/But if that ain’t country, tell me what is?” she sings from the gut, after listing off her bonafide country credentials.

Like everything Beyoncé has done, specifically in the last decade of her career, Cowboy Carter is a college dissertation of an album: richly researched and meticulously constructed. And while she has something to prove to a whole musical community, it’s more of a love letter to her Southern roots than strictly a honky tonkin’ romp.

Over a guitar that sounds like it was pulled from the Kill Bill score, she paints pictures of bloodstained couture and the similarly chilly ways she shares with her father. (And if you weren’t sold on her vocals yet, she delivers an Italian aria in the middle simply because she can).

From “Riiverdance” on, it seems like Beyoncé is either referring back to or recontextualizing  Renaissance , her disco masterpiece and Act I of the trilogy. The final tracks have a holiness to them, more hints of gospel and peaceful meditations that slip out of the Southern and country-western-ness of the rest of the album, like the serenity of “II Hands II Heaven.” She slips back into her cowboy era long enough for “Sweet ★ Honey ★ Buckiin,” where she sings Patsy Cline’s “I Fall to Pieces” over a Jersey club beat before singing her ode to a horse.
